Food Systems

The need to feed the global population with healthy sustainably-sourced food presents one of the major challenges of the future. Food systems are intricately linked to social and economic justice as well as complex resources issues such as water and energy. The food that we eat and the processes that are utilized to produce, transport, and distribute that food all have a significant impact on the environment and social well-being. Researchers at the University of Utah are working to understand how to best develop local and global healthy and sustainable food systems.

Edible Campus Gardens on the U of U campus serve as outdoor laboratories and demonstration gardens to showcase the beauty and diversity of edible landscaping in an urban setting.

Food Studies serves to link individuals interested in food studies on campus and in the larger community to foster interdisciplinary food-related research and teaching collaborations that move the field forward and improve access to healthy foods in our own community.
